My husband is IN LOVE with this recipe! After giving it to him to eat I expected him to comment on the meal (if he liked it or not), but I didn’t hear anything which surprised me. It took me a while to realize he didn’t have the time to say anything at all because his mouth was full! He couldn’t stop eating it! After he finished eating he would not stop telling me how delicious this was! He even told me that it was better than the original recipe from Viva Chicken!
My husband and I are in love with the restaurant Viva Chicken, but we rarely go because of how expensive it is. After ordering a couple meals it usually ends up being around $40-$50. Ouch. So, I decided to try to make it at home for cheaper! I changed the recipe a bit and wanted to share it with you guys! Its super simple, but SO delicious!
Quinoa Stuffed Avocado Recipe:
You will need:
- Rotisserie Chicken
- BBQ sauce
- 2 Avocados
- Cut two avocados in half, take the seeds out, etc. Place them face up.
- Boil quinoa covered for 20-25 minutes and let it steam for 5 minutes. Fluff with a fork. Scoop a spoonful of quinoa and place in avocado. Repeat for each avocado there is.
- Pull chicken from rotisserie so it is shredded. Place on top of avocado and quinoa.
- Pour BBQ sauce on top of chicken. (I like to put it on the side and just dip the avocado in the sauce)
And that’s it! It is super simple and I can’t get over how delicious and HEALTHY this recipe is!
